Speedy Chicken Stir Fry

Here’s a quick and easy recipe using Kraft’s Lite Asian Toasted Sesame Dressing that tastes great. A changed it up a bit by adding a few vegatables (onions, carrots, and broccoli stalk) and stir fried them after the chicken. I increased the sauce by 50% due to the added veggies. This is definitely a recipe you must try and will love. Next time I’ll try adding a tablespoon or two of peanut butter.

Click on below link to watch the video to see how it’s preparred. (hmmm. . . boil the broccoli in with the noodles, great idea and saves on pans! Pete and I like are veggies a little to the softer side rather than crunchie. 5 mins was perfect) http://allrecipes.com/video/351/speedy-chicken-stir-fry/detail.aspx?prop24=PN_1.1.1_TP.Speedy-Chicken

Here are the modified agreements as I used them:

3 breasts of boneless/skinless chicken cleaned and sliced evenly

1 large onion in stir fry size slices

1 or 2 carrots  in stir fry size slices

2 stalks of broccoli.  Tops for boiling with noodles. . . . stems peeled and in stir fry size slices

(change or add veggies as you prefer.  I think peas or green beens would be good variations)

3/4 cup of Kraft Lite (or not Lite as you prefer) Asian Toasted Sesame Dressing

3 Tblsps soy sauce

2 cloves garlic chopped (or 1/2 tsp garlic powder)

approx. 1 tsp fresh grated ginger (or 1/2 tsp ginger powder)

red pepper flakes to your liking (Pete and I like it spicy, so I added about 1/2 tsp and a couple dashes cayenne pepper)

couple of hand fulls of peanuts –  chopped, or cashews if you want to change it up a bit.

The only thing different that’s not in the video is after stir frying the chicken, I put the chicken in a bowl, added a little more oil to the pan and than stir fried the sliced veggies.  After getting them as we like, about 4 mins, I added chicken back to pan along with sauce.
